Recipe • Pasta in Creamy Coconut Sauce
Today's recipe is a relatively easy one, I've cooked this Pasta in Creamy Coconut Sauce 3 times and really love its flavor, even Lil K gave his thumbs up for it!
I'm using San Remo brown rice penne pasta here and you may vary the ingredients required.

50g San Remo Brown Rice Penne Pasta (Reserve cooking water)
1TBS Olive Oil
1 clove Garlic, chopped
2 tsp chopped yellow Onion,
40ml UHT Coconut Milk (for cooking)
2TBS grated Parmesan cheese
40g Brown Swiss Mushroom, sliced
1/3 Yellow Bell Pepper, sliced
1 sausage, sliced
3/4 red Tomato, diced (or 6 cherry tomatoes,halved)
Salt & Pepper to taste
Chilli Flakes/Tabasco sauce (Optional)
•Cook San Remo penne pasta in a pot of salted boiling water until al-dente, according to instructions on package. Drain and retain some water from cooking pasta. Set aside.
•Heat a pan with olive oil, sautéed chopped onions til soften. Add in garlic, fry til fragrant but not brown.
•Add in broccoli, bell pepper, mushrooms, cherry tomatoes and sausages. Stir fry for a few minutes, add about 30ml of the pasta water. Pour in coconut milk and allow to simmer a few minutes over low heat.
•Pour in penne pasta, add sm more water if it's too dry, toss to mix well. Sprinkle parmesan cheese and toss at the same time. The sauce will thicken slightly. Add a pinch of salt & black pepper to taste.
