Recipe • Yogurt Muffins with Strawberry & White Choc

This recipe is a keeper. 
Versatile & easy. Muffin fillings can be changed to individual preference. 

Yogurt Muffins with Strawberry & White Choc 

Ingredients:
(Makes 12 pcs) 

375g Self Raising Flour 
100g Sugar 
2 Large Eggs
125g Unsalted Butter, melted
240g Plain Yogurt (I used Greenfields No Sugar added yogurt)
1tsp Vanilla Extract
200g Strawberries, cut into chunks
Handful of White Chocolate Chips

Method: 
-Add melted butter, eggs, yogurt, vanilla extract to a mixing bowl. Use a hand whisk to mix well until incorporated and smooth. 
-Add in strawberry chunks.
-In another bowl, combine sugar and self raising flour. Add this dry mixture to wet mixture above. Mix gently until combined.
*Do Not Over Mix* Mixture supposed to look doughy and sticky.

-Preheat oven to 190degC.
-Prepare muffin pan, line with muffin cups and fill each cup to ¾ full. Sprinkle white chocolate chips on top of batter.
-Bake in the oven for 25 minutes.
*Oven time and temperature may vary.
-Let muffins cool slightly, pipe Nutella and add on Christmas sprinkles for a festive touch!

These muffins can be stored in airtight container for 2-3 days orin the fridge for up to a week. Just lightly warm them in preheated oven for a yummy treat! :)
