Hi, everyone! I realise my last post was in November! 2 long months of neglecting this lil space! We went to Bangkok & Huahin during the December school holidays, which I hope to blog about soon! ♡ But for now, it's a simple recipe of XO sauce braised Ee-fu noodles! Both my boys love eating ee-fu noodles, which is so simple to cook and I usually do non-spicy for them.  Recipe link here . But today, I fry up a mild spicy version using  Fortune brand  original dried scallop in XO sauce. I also added Locos and Abalone sauce from the same brand. Today's recipe of Soba Salad with Miso Vinaigrette is really easy. The dressing can be made in advance to save time if you're packing it in a lunchbox. :) Salad ingredients can be altered to your preference too, add on grilled salmon or chicken for a more flavorful and substantial meal! This is a continuation of the earlier recipe post on Laksa Meatballs with Laksa Pasta. This laksa pasta is delicious on its own too, making it a great option for meatless meal! * However, do note that the Laksa paste contains garlic. * Laksa Pasta (serves 1 pax) Ingredients: Pasta (I used farfalle) 1 clove Garlic, minced 10gm Unsalted Butter Fresh Shiitake, sliced (or any mushroom as preferred) 1/3 Yellow Capsicum, sliced into strips 3-4 Cherry Tomatoes, halved 1tsp Dancing Chef™ Laksa paste 1/2tsp Sugar 2tsp UHT Coconut cream 50ml Water (from cooking pasta) Dashes of pepper & salt if preferred Laksa leaves (optional, to garnish) Method: •Cook pasta to al-dente, according to package instructions. I'm sharing a quick & easy recipe of Braised Ee Fu Noodles , it's one of Lil K's favourite & he calls it "T-shirt Noodles" 😅 because Ee Fu sounds like "clothing" in Mandarin. So... Ee Fu = T-shirt, geddit? 😃😃😃 And of late, "flying noodles" seem to be very popular on social media! Since it's the month of Halloween 👻👻, I thought it would be fun to trick my kids!
